A menudo Quique Dacosta suele bromear, comentando que al “Pez Limón” (un auténtico icono dentro de su cocina) le gusta salir literalmente del agua para participar en su proyecto. De esta pequeña anécdota nació la idea de preparar una pieza específica para un plato basado en esta variedad de pescado. El resultado es, literalmente, un «Pez Limón». Un híbrido visual que esconde en su interior un ceviche en espuma con toques de sal limonada.
